Thai Beef with Noodles

1 pound boneless sirloin steak -- 1 inch thick
1/4 cup dry sherry
1 1/2 tablespoons soy sauce
1 teaspoon freshly grated ginger
1 teaspoon garlic -- mashed
1 tablespoon olive oil
1/4 teaspoon crushed red pepper
2 cups cooked noodles
1/4 cup green onions -- chopped
Combine sherry, soy sauce, ginger, garlic, oil, and pepper pods. Place beef
steak in plastic bag; add marinade. Close bag securely and marinate 15
minutes. Pour off marinade. Reserve.
Heat nonstick skillet over medium heat 5 minutes. Add steak and cook 12 to 5
minutes for rare to medium, turning once. Remove steak to cutting board and
keep warm.
Dissolve 2 tablespoons cornstarch in reserved marinade and 1/4 cup water;
add to skillet. Bring to a boil, stirring constantly. Stir in noodles. Carve
steak into thin slicesand serve over noodles. Sprinkle with green onion.
