1 Lb Alligator meat -- chop
1 Egg
1 Tbsp Onion -- chop fine
2 Tbsp Celery -- chop fine
1 Tbsp Parsley -- chop fine
2 Tbsp Shallots -- chop fine
2 Tsp Lemon pepper
1/2 Tsp Salt
1/4 c Bread crumbs
Flour to dredge
1 c Cooking oil

Mix all ingredients, form into 1" balls. Allow to set for 1 hour. Dredge
with flour and fry until brown. Serve hot. Source: Louisiana Seafood & Wild
