6 tablespoons onions -- pared, diced small
6 tablespoons coriander -- fresh, chopped
3 tablespoons light brown sugar -- firmly packed
1 teaspoon black pepper -- coarsely ground
4 1/2 tablespoons garlic -- pared, minced
1/4 teaspoon red-pepper sauce
9 tablespoons lemon juice
6 ounces low-sodium soy sauce
3 pork tenderloins -- well trimmed, (12
-- oz. each)
Combine all ingredients except pork; mix well. Place pork in glass dish; pour
marinade over. Cover; refrigerate for 4 to 5 hours. Place pork on wire rack
in sheet pan; slow roast at 250 degrees F for 1 to 1-1/2 hours or until pork
reaches internal temperature of 150 degrees F. Pork also can be broiled or
grilled.
