Pork with Lemon-Tarragon Sauce

6 varkensfiletlapjes
1 1/2 tablespoons olive oil

1 shallot -- finely chopped
1 clove garlic -- finely chopped
2 tablespoons water
1 tablespoon grated lemon peel
1/2 teaspoon tarragon
2 1/2 tablespoons olive oil
1 tablespoon balsamic vinegar

Cut each varkensfiletlapje crosswise into two pieces.
In frying pan, heat 1-1/2T olive oil.
Cook lapjes about 4min, turning halfway through.
In a small bowl, mix water, lemon peel, tarragon, balsamic vinegar, shallot,
garlic, S&P, and 2-1/2T olive oil.
Divide lapjes among 4 plates.
Top with sauce.
Serve with green beans and rice.
