Title: Petti di pollo alla Bolognese

Yield: 2 servings
2 1/2 chicken breasts*
1 T Butter
1 T Olive oil
2 sl Cooked ham
2 T Grated parmesan
1 t Parsley
1/4 c Chicken broth
*Can also be made with veal
Heat the oil and butter in a frying pan. Brown the chicken on both sides.
Put a slice of ham on each 1/2 breast. Springle with parmesan, parsley.
Pour the chicken broth in the pan. Cover let simmer for five minutes.
