Stewed Chicken and Broth

4 1/2 pounds roasting chicken -- cut up
4 celery stalk -- cut up
1 small onion -- sliced
2 sprigs parsley
1 bay leaf
1/2 teaspoon dried thyme -- crushed
1/4 teaspoon pepper
4 cups cold water
Place chicken in crockpot. Add vegetables, herbs and water.
Cook on low for 6-8 hours or on high for 3-5
Remove chicken from crock pot, strain broth into a container and discard the
vegies.
Use broth and chicken in casseroles or other dished. Refrigerate for up to 3
days or freeze airtight 3 weeks.
