Tarragon Chicken with Mushrooms

2 tablespoons butter
1 pound mushrooms -- sliced
3 pounds chicken -- cut-up
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
1/2 cup dry white wine
1 tablespoon fresh tarragon chopped or 1 teaspoon -- dried
1. In large frying pan, melt butter over medium heat. Add mushrooms and cook ab
out 5 minutes, until lightly brown. Remove from pan and set aside.
2. Season chicken with salt and pepper. Ina large frying pan, heat olive oil. A
dd chicken and cook over medium heat until brown, about 5 minutes a side.
3. Drain off excess fat. Add wine and tarragon. Cover, reduce heat, and simmer
25 minutes. Add reserved mushrooms and cook 5 minutes more.

NOTES : Carbohydrates 8.8 grams, fiber 1.8
Instead of whole chicken I like to use thighs and or drumsticks 8 to 10 pieces
This dish ages very well and leftovers improve in flavor over 4 or 5 days.
