Tom's Turkey Loaf

1 package Bell's Meatloaf Mix -- * see note
1 pound fresh ground turkey
1 cup celery -- chopped fine
1 small onion, chopped -- optional
3 cloves garlic, chopped -- optional
1 egg OR -- optional
2 egg whites
6 strips turkey bacon (or more)
olive oil OR
nonstick cooking spray

*NOTE: If you can not find Bell's meatloaf mix, substitute up to 3/4
cup bread crumbs, 1 tablespoon dried parsley, 1/4 teaspoon each basil
and thyme. Mix all together and reserve.
1. Preheat oven to 450 degrees. Follow directions on the meatloaf mix
package to reconstitute OR use alternate mix found in the note above.

2. Mix in turkey, celery Add onion, garlic, egg if desired. If using
the alternate meatloaf mix, add that to the turkey mixture and mix
well.
3. Form meat mixture into a loaf slightly shorter than the length of
the turkey bacon.
4. Place bacon strips lengthwise over the loaf all the way around it
so that it is encased in the strips. Use toothpicks, if necessary to
secure ends.
5. Spray a cooking rack with the nonstick cooking spray or use the
olive oil to coat. Place rack onto a cookie sheet that has sides.
Place turkey loaf on the rack. Bake one hour at 450 degrees until the
outer bacon is very crisp.

plebian, but makes a very good low fat meatloaf..I have found in that
in the bottom of the pan is about 1 tbsp. of fat. I like to serve
this with garlic mashed potatoes and steamed spinach with tarragon.
Lynn's notes: I made this 2-10-97. I used all of the optional
ingredients and this was the best turkey loaf I've ever tasted. When
cooked, the loaf resembles a football and would be good served at a
Super Bowl Party.
