Lisa's Pizza Dough

6 ounces water -- 80-90 degrees F
1 Tablespoon olive oil
2 cups bread flour
2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon garlic salt
2 teaspoons Bread Machine Yeast
2 teaspoons wheat gluten
1/8 teaspoon oregano
cornmeal for dusting
1. Select DOUGH.
2.Add ingredients in order, according to your bread machine instructions.
START.
3.When done, remove pan from breadmaker. Place dough on floured surface.
Knead about 1 minute, then let rest 15 minutes.
4. Roll dough out to fit 2- 14 inch pans, place dough into greased pans
which have been dusted with cornmeal. Press dough into pan forming an
edge. Let rise in warm, draft-free place for 20 to 25 minutes.
5.Spread with pizza sauce, then toppings. Bake 425 degrees for 20 to 25
minutes.

NOTES : NOTE: If you are using a pizza stone and rack, put the stone in
the rack and place it in the center of the oven and heat oven to 425
degrees during last rise. If you want to freeze your dough do it BEFORE
last rise. Roll dough on floured surface, Sprinkle bread peel with
cornmeal and slide it under dough. Spread sauce and toppings on,open
oven door quickly, gently slide the pizza from peel to preheated stone,
bake about 15 minutes till crispy and light brown, carefully remove pizza
rack from oven, cut and serve.
