12 Chicken Breast Halves -- Skinned And Boned
1/4 Cup Flour
1/4 Cup Butter -- Clarified
12 Slices Prosciutto
12 Slices Monterey Jack Cheese
1/2 Cup Onions -- Chopped
1/4 Teaspoon Salt
1/2 Teaspoon Pepper
3 Large Garlic Cloves -- Minced
1/2 Pound Mushrooms
1/2 Cup Dry White Wine
1 Cup Chicken Broth
1 Teaspoon Thyme
1/2 Cup Dry Sherry
1/2 Cup Cream
Dip chicken in flour; brown in butter. Arrange in a buttered 13x9"
baking pan. Top each breast with 1 slice Prosciutto and 1 slice cheese.
Cook onions and garlic until soft; add mushrooms, wine, broth and herbs.
Bring to a boil and cook 10 minutes. Stir into hot mixture 1 tablespoon
flour and a small amount of sherry. Stir in remaining sherry and cream.
Season with salt and pepper. Pour sauce over chicken. Bake in a 375
degree oven for 30 minutes.
