2 tablespoons curry powder
1 teaspoon cumin
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
pinch cloves
2 tablespoons water
1 teaspoon minced garlic
1 teaspoon tomato paste -- optional

1 tablespoon vegetable oil
2 cups finely chopped onions

8 boneless, skinless chicken thighs, halved -- (about
1-1/4#)*
1 golden delicious apples, cored -- cut in 1" pieces
1 cup sliced carrots -- 1/2" slices
3/4 cup chicken broth
1 cup frozen peas -- thawed

1 cup couscous or rice -- cooked
*Can also use kip filets. [kip filet=skinless, boneless, chicken breast half]
Start cooking couscous or rice.
Combine first 8 ingredients in a small bowl.
Stir until blended; set aside.
Heat oil in Dutch oven over high heat.
Add onions and cook, stirring occasionally, until tender, 3-4 minutes.
Add spice mixture; cook until fragrant, 1 minute.
Add chicken, apple, carrots, and broth.
Reduce heat and simmer, covered, stirring occasionally, until chicken
is cooked and vegetaables are tender 12-14 minutes.
Stir in peas and heat through.
Serve with cooked couscous or rice.
Yield: 4 servings @ 485 calories each.
