Corn Fritters
"Savory Corn Fritters" from "weight Watchers Healthy Life Style
Cookbook:
l cup + 2 teaspoons allpurpose floor
(I mean flour)
l/4 tsp baking powder
l egg substitute
l/2 C thawed frozen corn
l/2 C cream style corn
2 tbsp finely chopped red bell pepper
Directions:
Mix flour, baking powder, egg substitute, corns, bell pepper.
Spray skillet with non stick cooking spray. Drop batter by
tablespoons, forming four fritters. Cook over medium heat
untilbottoms are lightly browned, 2-3 minutes. Flip fritters
and cook 2 - minutes longer. Garnich with red bell pepper rings.
Makes 4 servings: = 2 fritters each.
