1 1/3 cups all-purpose flour
1 cup corn flour -- PLUS extra
2 tablespoons corn flour
2/3 cup sugar
5 teaspoons baking powder
1/2 teaspoon salt
1 1/3 cups milk
5 tablespoons butter -- melted
1 teaspoon bacon grease
1 extra-large egg -- beaten
Pre-heat the oven to 350 degrees. In a large bowl stir together the
flours, sugar, baking powder, and salt. In another bowl mix together the
milk, butter, bacon grease, and egg. Add the dry ingredients to the wet
and mix until all lumps are dissolved. Pour the mixture into an 8 x
8-inch baking pan and bake until golden brown, about 50 to 60 minutes.
Yield: 9 servings
