2 c Cornmeal
2 ts Baking powder
1 ts Baking soda
3/4 ts Salt
2 Eggs; beaten
2 c Buttermilk
2 tb Vegetable oil

Preparation Time: 0:10
Combine cornmeal, baking powder, soda, and salt in a large
bowl; add eggs, buttermilk, and oil, stirring just until
dry ingredients are moistened. Place a well-greased 10-inch
cast-iron skillet in a 450 degrees oven for 4 minutes or
until hot. Remove from oven; spoon batter into skillet.
Bake at 450 degrees for 25 minutes or until lightly
browned. Yield: 8 servings.
