2 cups unbleached flour
2 cups water
Combine yeast, flour and water in a glass bowl and mix well. Let stand in a wa
rm place for 1 to 3 days, stirring occasionally. After 3 days, store in fridge
. Replenish by adding equal parts flour and water.
