Applesauce Cake Squares

1/2 cup butter -- softened
2 eggs
2/3 cup apple juice concentrate
1/2 cup applesauce
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon -- ground
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large apples -- peeled/chopped
creamy topping
1/2 cup cream -- heavy
1 teaspoon vanilla
1/4 teaspoon cinnamon -- ground
Preheat oven to 375. Beat butter in large bowl until creamy. Blend in eggs, jui
ce, and applesauce. Combine dry ingredients. Gradually add to egg mixture, beat
ing until well blended. Stir in apples. Spread batter evenly into greased 8" sq
uare baking pan. Bake 20-25 minutes, until wooden pick inserted in center comes
out clean.
Cool on wire rack. Cut into squares. Serve warm or at room temperature, with Cr
eamy Topping if desired.
Creamy Topping: Beat cream in small bowl at high speed of electric mixer until
soft peaks form. Beat in vanilla and cinnamon until stiff peaks form.
