Fresh Asparagus With Herb Butter

2 1/2 Lb. asparagus -- (2 1/2 to 3)
1/2 Tsp. salt
Herb Butter:
1/2 C. butter or margarine -- melted
2 Tbsp. finely chopped parsley
1 Tbsp. snipped chives
1/2 Tsp. dried tarragon leaves
2 Tbsp. lemon juice
Break or cut off tough ends of asparagus stalks. Wash
stalks well with cold water; if necessary, use a soft brush to
remove grit. With vegetable parer, scrape skin and scales from
lower part of asparagus stalks. In large skillet, add salt to
1 1/2 inches water; bring to boiling. Add asparagus spears.
Boil, covered, 8 to 10 minutes. Meanwhile, make Herb Butter.
In a small bowl, combine the melted butter or margarine,
parsley, chives, tarragon and lemon juice. Stir until well
combined.
To serve, drain asparagus well. Arrange on warm platter.
Spoon herb butter over asparagus. Serve immediately.
Makes 6 servings.
