In a casserole dish, layer zucchini, crackers, tomatoes, and Velveeta cheese. s
eason to taste with salt, pepper, minced onion, and parmesan cheese.
Bake at 350 until cheese bubbles and zucchini is soft. (approx 30-40 minutes)
