Zucchini Casserole

2 small boxes stuffing mix
Mix together:
4 cups shredded zucchini
1 cup sour cream
1 sm. can boneless chicken
1 onion
1 cup shredded cheddar cheese
Layer half of the stuffing mix in bottom of a 9 x 13 baking dish.
Add
zucchini mixture and top with the remaining stuffing. Bake covered for
1
hr. at 350. Uncover and let stand a few min. before serving.

- Just happened to check in - hope this gets to you so you can make
dinner! I used stovetop stuffing, herb seasoned I think, right from the
box; I didn't salt or let the zucchini drain at all - all the moisture
in
them seemed to be enough to make the stuffing as it baked. (I also
grated
in a carrot & tossed in a little garlic powder and some basil - just
can't
leave a recipe alone as is!) Enjoy your dinner!
