Select good baking potatoes of uniform size and shape, scrub thoroughly, and ba
ke in a moderately hot oven (375 degrees) for 45 to 60 minutes, or until soft w
hen pressed. Take the potatoes from the oven at once, work gently with the fin
gers to loosen the skin, make a short gash to allow the steam to escape, season
with butter, salt, and a dash of paprika, and serve at once.
For baked potatoes in the half shell, cut the potatoes lengthwise as soon as th
ey are taken from the oven, scrape out the inside, being careful not to break t
he skin, mash, season with salt, pepper, butter, and cream or rich milk, and be
at until light. Place this mixture in the skins, brush the tops with melted bu
tter, and put the potatoes in the oven to reheat and brown. For variety,sprink
le grated cheese over the potatoes before they are browned or add a little chop
ped green pepper to the potato mixture.
