4 cups finely chopped potatoes
2 tablespoons chopped onion
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons fat
1/4 cup hot water
parsley

Combine the potatoes and onions, salt, and pepper. Melt the fat in a smooth he
avy skillet, add the water, put the potatoes in a thin even layer, and cook slo
wly until a golden brown crust is formed. Fold the potatoes over like an omele
t, turn out on a hot platter, garnish with parsley,and serve at once.
