Mashed Potatoes With Garlic (Grausman)

8 large potatoes
8 garlic cloves
3/4 teaspoon salt
milk -- optional
1/8 teaspoon freshly ground pepper
Peel potatoes and cut into large chunks. Place in cold water until cooking
time. To cook, place potatoes and garlic in a 4-quart pot and barely cover
with water (the tips of several potatoes will not be covered). Add 1/2
teaspoon salt and bring to boil over high heat. Boil, uncovered, over
medium-high heat until tender, 20 to 30 minutes. Potato is cooked when
point of a knife goes in and out without potato clinging to it.
Puree potatoes using potato masher, food mill or similar device. Do not use
food processor which will cause potatoes to become pasty. Moisten puree
with some of the cooking liquid until desired consistency is reached. If
more liquid is necessary, use milk. Season with remaining salt and pepper.
