New Potatoes Country Style

2 1/2 Lb. small new potatoes -- (2 1/2 to 3)
1/2 C. margarine
3 Tbsp. flour
1 Tsp. salt
2 C. water
1 Tbsp. lemon juice
fresh dill or chives
parsley
1/4 Lb. bacon fried crisp
Cook potatoes in salted water until tender. Leave skins
on. Can be peeled once around the center. In saucepan over
low heat melt margarine. Stir in flour, salt and pepper;
slowly stir in water. Cook until thickened. Add lemon juice.
Put potatoes in casserole. Pour sauce over (this far can be
done a day ahead). Bake 325 degrees for 20 minutes. Top with crum-
bled bacon, generously sprinkle with dill weed and parsley
before serving.
Serves 6.
