Pesto Potatoes

2 Cloves garlic
3 Oz. Parmesan cheese -- cut into cubes
1-inch
2 C. basil leaves (fresh or
1/2 C. dry)
1/4 C. walnuts
1 Tsp. salt
1 C. oil
2 1/2 Lb. new potatoes -- cooked and sliced
Using a steel blade process in a food processor, mince
the garlic. Add cheese and process until finely minced. Add
basil, nuts and salt and process until finely minced. With
machine running add oil in a steady stream. Toss with sliced
potatoes. Serve warm or at room temperature.
