Potato Puff

Amount Measure Ingredient -- Preparation Method

1 1/2 cups Light Mashed Potatoes
2 tablespoons Egg Beaters=AE 99% egg substitute
1 teaspoon onion flakes
1/2 teaspoon mixed seasoning
2 egg whites
1 tablespoon parmesan cheese

Mix together well the potaotes, egg substitute, onion flakes, and mixed=
seasoning. Set aside.
Beat egg whites until stiff but not dry. Stir 1/4 of the beaten egg=
whites into the potatoes to lighten the mixture. Then fold the potatoes=
into the remaining beaten egg whites.
Turn into a 1-quart casserole. Sprinkle with cheese. Bake in a 400=B0=
F. oven for 20 minutes until puffed and set. Serve at once. Makes 4=
servings.
