Twice-Baked Potatoes

4 medium baking potatoes
1/2 cup low-fat sour cream
1/4 cup milk (I use 1%)
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon dried minced onion
1/2 cup shredded cheese or crumbled blue cheese
Scrub potatoes; prick several times with a fork. Bake at 350F for an hour
(turn potatoes after 30 minutes). Let cool slightly. Cut a 1-inch strip
from the top of each potato. Carefully scoop out pulp, leaving a 1/4-inch
shell intact; mash pulp. Combine pulp, and remaining ingredients. Spoon
mixture into potato shells. Place on a cookie sheet. Return to oven and
bake 15 minutes or until heated through and cheese is melted.

NOTE: This was adapted from a couple of of twice-baked potato recipes.
Both called for 1/4 c. melted butter, but I have omitted it. I don't think
you really need it.
