Baked Creamed Spinach
1 Pkg Frzen, Chopped Spinach
2 Tbls Onion, Minced
1/2 tsp Salt
1/4 tsp Pepper
4 oz Cream Cheese
1 Tbls Basil, Chopped
3 Tbls Parsley
1 Egg, Chopped
Preheat the oven to 325 degrees.
Place the spinach in 1/2 cup of boiling water.
Return to a boil and cover.
Lower heat and simmer for about 4 minutes or until the spinach is broken up.
Drain but do NOT press all the liquid from the spinach.
Combine the spinach, salt, onion, pepper, cream cheese, basil, parsley and egg
in a blender or food processor.
Process until just blended.
Pour into a buttered 1 quart casserole.
Bake for 30 minutes or until a knife inserted in the center comes out clean.
Serve hot.
