Cheese-Stuffed Acorn Squash

4 Medium acorn squash
salt and pepper
6 Oz. Monterey Jack or
Icelandic cheese -- diced
4 Tsp. butter
1 1/3 C. milk
4 Slices white bread -- toasted and diced
Heat oven to 325 degrees. Cut slice off bottom of squash so it
stands up. Cut hole in top to form lid. Scoop out seeds.
Sprinkle inside with salt and pepper. Layer (stuff) inside
with cheese, bread, butter and milk. Sprinkle salt and pepper
on top. Put on lid. Place in baking dish and bake 1 1/2 hours
or until tender when pierced with fork.
