1 1/2 quarts diced summer squash
3 tablespoons butter -- or other fat
1 1/2 teaspoons salt
1/8 teaspoon pepper
Select young tender squash, wash well, and remove the tips from each end. Cut
the squash into small pieces, leaving the skin on unless it is very tough. Mel
t the fat in a skillet until slightly brown, put in the squash, sprinkle with t
he salt and pepper, cover, and cook for 10 or 15 minutes at moderate heat. Rem
ove the cover and cook a little longer for the liquid to evaporate. Serve hot.
