Fried Tomatoes With Gravy

4 Large ripe tomatoes
1/4 C. plus 2 Tbsp.
all-purpose flour -- divided
1/4 C. plus 2 Tbsp. butter or margarine -- divided
1/4 Tsp. salt
1/8 Tsp. pepper
1 Tbsp. brown sugar
1 C. milk
Cut tomatoes into 1/2 inch slices; dredge in 1/4 cup
flour. Melt 1/4 cup butter in a large skillet over medium
heat; add tomatoes and cook until golden brown, turning once.
Arrange the tomatoes on a serving platter and sprinkle with
salt, pepper and brown sugar. Keep warm. Melt remaining 2
tablespoons butter in pan drippings; add remaining 2 tablespoons
flour, stirring until smooth. Cook 1 minute, stirring
constantly. Gradually add milk and cook over medium heat,
stirring constantly, until thickened. Spoon over tomatoes and
serve immediately. Yield: 6 to 8 servings.
