Marinated Tomatoes

1/2 cup vinegar **
2/3 cup extra virgin olive oil
1 tsp. salt
1/4 tsp fresh ground pepper
1 tsp fresh thyme *
1 tsp fresh tarragon **
1 tsp fresh oregano *
8 leaves of fresh basil -- chopped (6 to 8)
1 pkg. sweet-n-low
1/2 tsp tabasco sauce
1 large clove garlic -- finely chopped
4 green onions -- including tops,
chopped
3 large tomatoes cut into 1/2 inch wedges Combine all ingredients, except for t
he tomatoes, in a medium sized bowl. Whisk until well blended. Add tomatoes a
nd toss lightly. Cover and marinate in refrigerator for one hour or until read
y to serve. Stir occasionally while marinating. Place tomatoes in serving dis
h and pour marinade over them.
Makes 4 to 6 servings
Note: Best when fresh herbs are used!

**If fresh tarragon is not available, use tarragon vinegar.
