Scalloped Tomatoes

2 Cans peeled whole tomatoes -- (20 oz.)
4 Slices white bread with
crusts removed -- cut into
1/4 Inch cubes
1 Stick butter
3/4 C. sugar
1 Tsp. salt
1/4 Tsp. pepper
Drain all but 1/2 cup juice from tomatoes. Place in a 2
quart shallow casserole. Cut tomatoes part way through.
Spread and place half of the bread cubes between wedges and
around tomatoes. Melt butter and stir in remaining bread
cubes. Sprinkle sugar, salt, pepper and buttered bread cubes
over tomatoes. Bake at 375 degrees for 45 minutes. Serves 8 to 10.
Fresh tomatoes may be used. Increase sugar slightly. Can be
frozen after baking. Goes well with roast beef.
