Scalloped Tomatoes

1 clove garlic -- minced
4 tbsp butter or margarine -- melted, divided
1 c finely chopped fresh or canned mushrooms
1 c crushed butter-flavored crackers
2 tbsp minced fresh parsley or 2 tsp dried
1/2 tsp salt
1/8 tsp pepper
6 med tomatoes -- quartered
In a skillet, saute garlic in 2 tbsp butter for 2 minutes. Add mushrooms; cook
until heated through. Remove from the heat. Add cracker crumbs, parsley, sal
t, pepper and remaining butter; mix well. Place tomatoes in a greased 8-inch s
quare baking dish. Top with the mushroom mixture. Bake, uncovered, at
400° for
20 minutes or until heated through.
