Veggie Crab Cakes

2 cups zucchini, peeled and grated
1 cup seasoned bread crumbs
1 Tbs. Old Bay seasoning
1 egg
1 Tbs. mayo
1 chopped red pepper (optional)

I add a small grated onion.

Put grated zucchini on cloth and squeeze out all the water.

Form into patties and fry in hot oil.
