Zucchini Fluff

Ingredients:
3 cups zucchini, shredded -- (4-5 medium)
1 medium onions -- diced fine (1 to 2)
1/2 cup Canola oil
1 1/2 Cups Bisquick® baking mix
4 eggs -- beaten
1/2 cup Parmesan cheese
1 cup shredded cheddar cheese
1 teaspoon salt and pepper -- (optional)
2 teaspoons parsley -- fresh chopped
Directions:
Preheat oven to 350 degrees F.
Mix all ingredients together in large bowl. Put in greased casserole or
pan (13x9x2 if you double the recipe) bake 35-45minutes at 350 degrees
or
until light brown on top.

NOTES : Notes: I am not sure where I found this I think a magazine as I
have made it for a couple of years.
As you notice it is now low fat, you might want to try using 1/4
up of chicken broth and only 1/4 cup oil.
