Zucchini Pancakes

1 1/2 cups zucchini -- shredded
1 egg -- lightly beaten
2 Tablespoons baking mix
3 Tablespoons grated Parmesan cheese
1 dash pepper
1 Tablespoon cooking oil
In a bowl, combine zucchini, egg, baking mix, cheese and
pepper. Heat oil in a skillet over medium heat; drop batter
by 1/4 cupfuls and flatten. Fry until golden brown; turn and
cook the other side.
