4 cups light cream
3 large eggs -- separated
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 cups brandy
3 tablespoons confectioner's sugar
Ground nutmeg to garnish
Combine 3 cups of the cream and the egg yolks in a medium saucepan. Stirring
constantly, cook over very low heat for 4 to 5 minutes, just until the
mixture is thick enough to coat the back of the spoon. Remove the pan from
the heat. In a large bowl, combine the granulated sugar, vanilla, and
brandy, stirring with a wooden spoon until the sugar is dissolved. Whisk in
the cream and egg yolk mixture thoroughly. Put the egg whites into the top
of a double boiler over boiling water and beat them to soft peaks, using an
electric mixer at medium speed. Gradually beat in the confectioners' sugar.
Continue to beat until stiff peaks form. Gently fold the beaten egg whites
into the large bowl; stir in the remaining cup of cream. Cover and
refrigerate for at least 1 hour.
To serve, ladle into small cups and dust each with a little nutmeg.
