Elderberry Wine (Champagne)

2 heads elder flowers -- in full bloom
1 gallon cold water
1 1/2 pounds loaf sugar
2 lemons
2 tablespoons white vinegar

Squeeze the juice out of the lemons. Cut the rind into four, put this with
the elder flowers, sugar and water into a large basin. Pour on the cold
water and steep for 24 hours. Strain off and bottle in screw topped lemonade
bottles. Keep for three weeks before using.
