1 cup Finely chopped cranberries *
2 Oranges -- ground skins & pulp
1/2 cup Raisins -- dark or golden
1/4 cup Brown sugar **
1/3 cup Margarine
2 Eggs
1 teaspoon Vanilla
1 cup Whole wheat flour
1 cup Unbleached white flour
2 teaspoon Baking powder

* substitutions = 2 cups whole fresh or frozen berries instead of 1 cup
chopped. ** substitutions = 2 T fructose instead of brown sugar Combine the
cranberriess, oranges, raisins and brown sugar in a mixing bowl. Set aside.
Cream margarine until light and fluffy. Add 1 egg at a time and beat well.
Blend in vanilla. Gradually add the flours and baking powder to the creamed
mixture. Stir in the cranberry mixture and pour the batter into a greased
13-x-9-inch baking pan. Bake in a 350 F oven for 30 to 40 minutes, or until
browned on top. Cool in the pan on a wire rack.
