2 cups granulated sugar
1/2 cup sour cream
1/3 cup white corn syrup
2 tablespoons butter
1/4 teaspoon salt
2 teaspoons vanilla,rum or brandy flavoring
1/4 cup candied cherries,quartered
1 cup walnuts, shopped
Combine first five ingredients in sauce pan: bring to a boil slowly,stirring un
til sugar dissolves. Boil, without stirring, over medium heat, to 236 deg. on c
andy thermometer, or unti a little l mixture dropped into cold water forms a s
oft ball. Remove from heat and let stand for 15 minutes; DO NOT STIR. Add flav
oring; beat until mixture starts to lose its gloss (about 8 minutes). Stir in t
he candied cherries and walnuts and wuickly pour into a greased shallow pan. Co
ol and cut into squares
Makes 1 1/2 pounds of fudge.
