Mocha Ice Cream

4 eggs (separated)
150 g plain chocolate
60 ml strong coffee
300 ml double cream
100 g sugar
1 tbsp coffee liqueur
Melt chocolate au baine marie. Beat in coffee & egg yolks. Whip cream in
large bowl & fold in coffee liqueur. In another bowl, whisk egg whites
until stiff peaks form, gradually adding sugar. Whisk mocha mixture into
cream, then gently fold into egg whites. Freeze for at least 5 hours. You
shouldn't need to beat the ice cream during freezing due to the texture,
but check half way just in case.
