Brie en Croute

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 3" round of brie (yes -- the canned kind,
but it does end out nice)
2 sheets phyllo dough
1/4 cup sliced cranberries
2 tbsp sugar
4 tbsp water
1/8 cup sliced almonds
butter
1 egg

There is a similar recipe for a full-sized wheel in the January Bon
Appetit. Your jelly/chutney sounds better than theirs. But I have a
question: do you eat the rind? Could you carefully slice it off?

I always wondered if other people ate the brie rind, having avoided it
over the years. But recipes that call for wrapping brie in puff pastry
or phylllo brings one face-to-face with the fact that people do eat
the thing.

Am I cheese challenged?

Paul
