1 1/2 c Swiss cheese; shredded
1 T Parsley; snipped
2 T Cream sherry
1/3 c Almonds; toasted and chopped
Parsley; snipped
Sesame seeds; toasted

Let cheese stand at room temperature about 1 hour. In a small mixer
bowl, beat cheeses and 1 tablespoon parsley till well blended.
Gradually add sherry, beating till nearly smooth. Stir in almonds.
Cover; chill 1 hour. With hands, mold mixture into log shape, about
10 inches long. Press additional snipped parsley and sesame seed

moisture-vaporproof wrap. Chill. Or, label and freeze, if desired.
If cheese log is frozen, let thaw 1-1/2 to 2 hours at room
temperature. Unwrap. Serve cheese log on platter with assorted
crackers; garnish with red grapes, if desired. Serves 10 to 12.
