10 ounces Frozen black eyed peas
1/4 cup Sweet red pepper -- chopped
1/4 cup Sweet green pepper -- chopped
1/4 cup Red onion -- chopped
1 tablespoon Fresh jalapeno pepper
Chopped
2 tablespoons Chopped parsley
1/4 cup LF or LC Italian dressing*
*Try to use low fat or low calorie dressing.
Rinse and drain peas. Mix with all other ingredients.
Refrigerate.
